Calisay is a Spanish liqueur made by steeping cinchona bark (quinine) and cinnamon in brandy, then sweetening it. ‘Calisaya’ is the name of a type of cinchona tree native to South America. Calisay was first produced in the Middle Ages by Bohemian monks.
