The second full release (8800 bottles) from Ichiro Akuto's Chichibu distillery is The Floor Malted, distilled in 2009 from barley malted to Akuto-san's specifications during a trip to England to learn the art of floor-malting for himself. The whisky was matured in mostly bourbon casks with a few 'chibidaru' quarter casks in the mix as well.
A 2009 vintage Chichibu aged in Chibidaru casks. These are hogsheads that have been shortened and are around 150 litres in volume. Chichibu distillery was opened by Ichiro Akuto in 2008 and already has a reputation for releasing delicious young whiskies.
A 2009 vintage Chichibu aged in port pipes. These are the largest casks used in the ageing of whisky and hold an impressive 550 litres in volume. Chichibu distillery was opened by Ichiro Akuto in 2008 and already has a reputation for releasing delicious young whiskies.
A great release from Ichiro Akuto's Chichibu, who are now firmly on the way to releasing their first five year old whisky. This is a multi-vintage vatting of whisky distilled at various times since they opened in 2008, including some of their oldest, five year old whisky. The whiskies that went in to this started their lives in bourbon casks but have all been finished in mizunara, Japanese oak.
The second release of peated whisky from Ichiro Akuto's Chichibu distillery. Distilled in 2010 from heavily peated, 59.6pmm malt, it's bottled at a higher strength than the first batch, giving a bolder and more intensely smoky flavour, with spice and sweetness.
