A medium-dry amontillado from this quality range of sherries. Made exclusively from Palamino Fino grapes and aged in a complex process for over 30 years before release. The producer recommends drinking this with cured ham, aged cheese or nuts.
A well aged PX from Romate, matured in oak for over 20 years to produce a wonderfully rich and raisin heavy PX. It's named form Francisco Jiménez de Cisneros, a Spanish cardinal and powerful politician who founded the institution that would become the Complutense University of Madrid, one of the world's oldest seats of learning.
Romate's Ambrosia Moscatel is a nectar-like sweet wine with buckets of fruit. Very rich, more aromatic though not quite as syrupy in texture compared to Pedro Ximenez, this will pair well with chocolate based desserts or even as an alcoholic ice cream sauce.
