A medium-dry amontillado from this quality range of sherries. Made exclusively from Palamino Fino grapes and aged in a complex process for over 30 years before release. The producer recommends drinking this with cured ham, aged cheese or nuts.
A rare and interesting wine, Palo Cortado starts out life as an Amontillado or Fino, aging under a layer of protective flor, before going on to age without the flor like an Oloroso. Apostoles continues this secondary aging up to a total of 30 years, including some time in ex-Pedro Ximenez casks, to produce a rich and concentrated sherry.

This very old Palo Cortado is a rare sherry that has originally begun ageing in the normal style, but which subsequently loses its flor (the thin layer of yeast that protects the sherry from the air) and ends up ageing oxidatively like an oloroso. The result is a dry wine with the freshness of an amontillado and the depth and body of an oloroso.

It's named form Francisco Jiménez de Cisneros, a Spanish cardinal and powerful politician who founded the institution that would become the Complutense University of Madrid, one of the world's oldest seats of learning.
