While a little difficult to get my head around without the beautiful smokiness that prevailed in my previous experiences of this distillery, this is a super malt, and a fascinating manipulation of the Caol Ila house style. Whilst of a very high strength, I didn't think the alcohol stole the show, rather the warm wafts of almost synthetic fruit - especially apple - and light, humid cereal grains came to the fore.

Caol Ila Built in 1846, Caol Ila is the largest of the eight working distilleries on the island of Islay (situated off the west coast of Scotland), with a production capacity of 3 million litres per year.
