A range of unusual liqueurs developed by Gabriel Boudier for use in the 3-Michelin-starred restaurants run by the Bernard Loiseau group. This raspberry and thyme version should be utterly delicious.
Bright ruby colour with a fuchsia tint. The nose is distinctly stony, but on the palate the liveliness of the fruit is surprising and refreshing: round and sharp fruitiness, with an almost antiseptic taste from the thyme. The raspberries are two native Burgundian varieties, with a large proportion of Scottish fruit as well. It combines brilliantly with rabbit.
