Nose: Brown butter and golden sugar, Indiana Jones's jacket, incense, rich earth, nutmeg, hints of marzipan, sweet sultanas and raisins. Woody notes hide underneath, with freshly cut old oak and a touch of damp bark.
Palate: Light and sweet up front, with apples and cinnamon, quickly turning dark and rich with liquorice, fruit cake, fruit jelly, damson jam, dark rye bread, woody resin and dark chocolate to follow.
Finish: Soft and sweet, with golden sugar and raisins darkening to black liquorice and liquorice root.
Comment: A clean and classic sherried dram, with enough sweetness to balance the darker flavours pulled from the cask.
