Blended Malt Scotch Whisky
Sheep Dip is what used to be referred to as a vatted malt: a blend of malt whiskies with no grain element. Crafted by Richard Paterson of Whyte & Mackay for the Spencerfield Spirits Company, the malts used are aged between 8 and 12 years old and are from good quality first-fill casks.

Producer's Notes (Richard Paterson)

Colour: Rich, golden copper highlights.

Nose: Delicate and refined. Soft sensual floral notes arise in perfect harmony supported by an attractive array of complex fruit flavours. Melon, pear and orange with a hint of almonds conclude this profusion of charming nuances.

Taste: Finesse and elegance gives way to a majestic assertion of pure malty flavours drawn from the four distilling regions of Scotland. Each area forges and makes its own inimitable contribution to this outstanding pure malt — the main accent being expressed from the Highlands and Speyside Valleys.

A Beautiful nose, dried fruit warm, walnuts, hot Leather, sherry, syrup and a hint of citrus, just the right amount of complexity, sweet and gentle on arrival; soft, amber malt sherry, culminates, in sea salts and warm peppered trace. Rating: 95/100

I had a bottle of this at my in-laws because no one would drink it. Got it years ago and liked it. Got a fresh bottle this weekend and it is as good as I remembered. I think this will stay in my cabinet rotation permanently. I've been a fan of Mr. Paterson and his work for a while. Value on this is excellent.

Nose (undiluted): Malty and sherried. Palate (undiluted): Soft, sweet start. Malty, cantaloupe, melon and some light tangerine. Oloroso sherry appears late. Finish (undiluted):A little drying malt, sherry gathers strength and fine line of sea salt and pepper tang at the very end. Bottom line: Lots of sweet Speyside flavors, no peat or smoke.
