Tasting Notes:

Tasting Notes by TF

N: Rich and luxurious, very strong aromas of smoked heather, with honeyed oatcakes or flapjacks, dark fruit (blackberry, plum, prunes), sponge cake, honeysuckle, and plenty of old polished oak giving a touch of spice.  Develops red liquorice notes with time. Highly attractive and complex.

P:  Medium-full.  Big spice hit, then dusty oak and gingery marmalade fruit arrive as well, although the spices (ginger, cinnamon bark, white pepper, chilli powder) and oak are dominant. The expected heather and honey notes emerge towards the finale.

F:  Decent length, warming, becoming dry.  The spices tingle longest on the tongue, with the heather and dry oak slowly dying away.

C:  A serious, at times quite austere dram that commands the attention. If this whisky was a teacher, it would be a gruff old-fashioned headmaster with a mortar-board, a cane and a heart of gold.

Highland Park Distillery

Highland Park was recently named 'Best spirit in the world' by USA whisky expert Paul Pacult in his 2005, Spirit Journal 100 listing of the world's best 100 distilled spirits. Highland Park's award-winning quality has its roots in the whisky's Orkney home and the obsession of the people who craft it. Established in 1798 on Orkney, Highland Park is one of the most remote Scotch whisky distilleries in the world. This northerly island location gives access to unique heather peat from the distillery's own moor, water from the same spring that has fed the distillery for over 200 years, and the cool, maritime climate that allows the spirit to interact gently with the carefully-chosen oak casks and develop into the fabulously rich, layered whisky that is  consistently lauded by connoisseurs and experts.
