Nose: A very appealing combination of apple blossom, honey and wood glue, develops polished oak, hints of pine sap and vanilla. Fantastic.
Palate: Medium-weight, but pretty intense flavours. The sweet vanilla'd oak is the prominent characteristic here, with the apple pie, glue and honeysuckle in the background.
Finish: Sweet with a hint of oakspice. Probably the gentlest Karuizawa finish I've had.
Comment: Fascinating to taste a spirit so associated with full strength sherry casks at a more normal strength from a bourbon cask.
