Ageing is done in 220-litre American Oak casks that were previously used for ageing Bourbon and covers a time frame of minimum two-three years allowing the "angels" to take their share.

This ageing process allows the rum to soften and hence the 1981 Vintage rum, which has spent 22 years in the barrel, is as good as any cognac and can be enjoyed with a fine cigar.

English Harbour Rum, one of world's oldest distilled spirit originating in Antigua in the West Indies since 1493, has been experiencing a resurgence the past few years thanks to the recognition that Rum is a unique spirit, a move toward sipping and learning about premium rums, and the rebirth of cocktails such as the ubiquitous mojito, which is now completely mainstream in restaurants, bars and clubs worldwide.

The Antigua Distillery Ltd has theadvantage of having rum brands that fit both of these trends. The English Harbour Extra Old Rum is a connoisseur's drink and has received numerous Gold Awards in the Aged and Premium Rum category. This mellow rum emanates rich luscious flavors when broken down with a little water or on ice giving a satisfying finish. It can also be enjoyed straight up giving it a lovely warm rounded rum finish or mixed with a little Crème de Cassis to create the English Harbour Rum Classic. The Five Year old is also a Gold Award winner, and is a perfect fit for creating the Mojito. The company ages their rums in oak casks that give an exceptional smooth mellow flavor and adds character to the cocktails.

"Cocktails make a drink once unthinkable drinkable. People are looking for quality ingredients in cocktails the same way they are in food. They should be as discriminating about cocktails as they are food," says Antigua Distillery Ltd.'s Sharon Green.

The Antigua Distillery Ltd produces high quality rums with all natural ingredients. The company uses a skillful combination of traditional methods and modern technology necessary for the best rum production. They continue the tradition of using copper pipes for its five column continuous Copper still that can produce 1.5 million litres a year around 90% alcohol by volume.
