Tasting Notes

Another wonderful example of the benefits of advanced age! All the panel wanted to buy bottles. It comes from a distillery which is still owned and managed by the descendants of the man who took it over in 1865. Its Gaelic name might be translated as the valley of the green grass. Conkers shot with deep magenta in colour, with huge slow legs, it is of course from an ex-sherry butt. The nose is rich, deep and complex: fruit compot and rum-toft, damson jam, black cherry preserve, blackcurrant jelly, then a hint of cedar-wood cigar boxes, warm sauna wood, then a minty, pan-drop or Benylin note, and finally dark toffee smothered in dark chocolate. The flavour at full strength is huge and sherried with liquorice Pontefract cakes; long and mouth-drying. With a dash of water it holds its complexity well - but don't add too much - becoming slightly more waxy and reinforcing the dark tablet note. The flavour is a balance of all the primary tastes, with a rich texture, pleasantly full. Superb old whisky.
