An unusual idea from the English Whisky Company. The sherry barrels they use for maturing their whisky are brought over with the Pedro Ximinez sherry from them. English single malt is added to the PX and further matured in barrel. This results in a delicious 'double-fortified' wine, which makes a delicious ice-cream sauce.
