The fruit for this Champagne comes exclusively from the Cote des Blancs. It spends four years on the lees and then a further eight years resting in the cellar post disgorgement.
For this wine Bruno employs a technique that is little used now in Champagne – he adds less yeast than for normal Champagne during secondary fermentation. This gives lower pressure and a gentler delicate bubble with real finesse.
