Product Description
The Yarra Valley-based distillery uses Australian wheat from New South Wales to make its spirit and combines spices and Mediterranean citrus with a handful of locally-sourced Australian botanicals to create its vibrant, bold character. These botanicals include warming pepperberry from Tasmania and lavender grown in the Yarra Valley.

Three Friends, Four Pillars
In 2013, a German-made copper pot still was delivered to three eagerly-awaiting friends in Victoria’s Yarra Valley. Upon its arrival, these friends got to work creating a modern gin with a quintessentially Australian character. Australia is fortunate enough to grow fresh citrus all year round, so whole organic oranges were chosen to help create Four Pillars Rare Dry Gin. Placing whole fruit in the stills imparted a bright citrus character to the wheat-based spirit that has become a part of the house style. However, one botanical does not a gin make; our Gin of the Year also includes nine others including lemon myrtle, cardamom, Tasmanian pepperberry and, of course, plenty of juniper.
