Nose: Thick layers of juicy dark fruit: singed raisins, juicy dates, plums and prunes, and damson jam. A savoury note of ashy peat rises through the centre, dragging sweet liquorice and tart black currants behind. Softer fruity notes poke out around the sides: apples, pears and hint of ripe mango.
Palate: The peat leads, rich smoke and dry ash. As that fades the fruit emerges, thick and rich with balanced sweet and savoury character. Spice builds, with cinnamon heat, cloves, Sichuan pepper and pine needles creating a gentle tingle in the cheeks. Rich tar, liquorice and raisin jam hove into view.
Finish: Tarry bung cloth and barrel char begin, with hints of candied lemon building. Dark chocolate starts on the lips and moves to the palate, lingering with sticky raisins.
Comment: Dark, rich and smoky, just as you'd expect. But there's much more going on here, with flashes of tropical fruit bursting through and layers of complex flavour from an excellent sherry cask.
