Tasting Notes from the Producer
Nose: Both rich and delicate, it opens onto a pleasant fruity smoothness: Mirabelle flesh, ripe pear, butterscotch, then a pleasant floral touch that makes it slightly spring like… Opening up slightly more, it unveils an almost exotic dimension on cocoa cream, vanilla, banana ice cream and prickly pear.
Mouth: Both full and fresh, it confirms the promises of the nose… The attack is delicate and the flavours come in a surprising crescendo: lemon vanilla cream, apple jelly, preserved ginger…
Finish: A wonderful strong length, it warmly develops on the vanilla of American oak, whilst preserving the sensation of the distillate’s delicacy. The flavours of ripe fruit: pears, apples, bananas and greengage become blurred like a sweet reminder.
Balance: A surprisingly fruity whisky that is both fresh and delicate.

i have been drinking this remarkable dram for a number of uyears before Mr Bouillon moved to his current premises . It is truly amazing dram and demonstrates that Etienne has been chaperoned by no one else but Jim McEwan . I really wish there was a main dealer in the uk . The cask strength bottlings are to die for !!!
