Like all amontillado sherries, this begins life as a manzanilla and ages for eight years under a film of yeast known as flor. After this, it spends a further seven years maturing with exposure to oxygen, creating a complex and dry sherry with intense aromas of toasted oak, hazelnuts and sea salt.
Barbadillo has been making sherry since the 1827 and is one of the largest wineries in Marco de Jerez. The solera system in which this Amontillado is aged has 12,667 sherry butts.
