Ximénez Spinola only makes wine with Pedro Ximénez – the much-heralded grape that makes luscious, sticky sherry. However, this winery does things differently, and with this particular bottling, the grapes are fermented exceptionally slowly so that the yeast gobbles up the sugar, leaving a wine packed with dried-fruit aromas and one that is dry and refreshing on the palate.
