Pierde Almas Conejo is made in a similar way to the better-known pechuga, but with a different meat. The third distillation still happens with a basket of fruits, herbs and nuts, but where pechuga uses a chicken or turkey breast, conejo uses a saddle of rabbit. A gamey, herbal and earthy style of mezcal that is one to sip and savour.
