Cascara is the fruit of the coffee cherry, and innumerable tonnes of it are thrown away every year during the coffee production process. Discarded take this fruit and steep it in a fortified wine which is itself discarded after seasoning whisky barrels, creating a flavourful and complex vermouth.

Aroma
Bright cherry notes, with rich cacao nibs, roasted coffee and merlot, rounded off with candied figs and cinnamon.
Taste
Fruit-forward damson jam and cherry flavours, with deep notes of dark chocolate and roasted coffee giving way to dry red wine and a peppery spiced finish.
The Discarded range
There are many food and drink manufacturing processes which involve wasting materials which could still add value and flavour elsewhere. The Discarded range seeks to use these materials to craft tasty drinks with a heart of gold — from the vermouth here to a banana peel rum and a grape skin vodka.

Discarded looked like an interesting addition to our Vermouth collection. We were not disappointed. This Vermouth has a complex mixture of bitter botanicals. It makes a very sophisticated Negroni with Cynar and gin. It's also very enjoyable as an aperitif over ice.
