    It's Friday night and time for the rum review. Established in 1884, Cockspur rum has been making rum. Created by Valdemar Hanschell in Barbados, a Danish seaman who settled there. At the time it was one of the biggest shipping ports in the Caribbean. His foundation of the rum didn't just start as a rum producer, since it was a big port he wanted to build a chandlery business, supplying the outgoing ships with food and supplies including rum. His business boomed and Cockspur rum became the best selling rum in Barbados. Hanschell may the mastermind behind his rum, but he left the crafting and production to the Stade brothers, owners of the West Indies Rum Distillery as they shared Hanschell's idea of making a more flavorful Caribbean rum free from the impurities commonly found in spirits in that day. The Stade brothers improved the distillation process and mastered the complex science of fermentation by introducing the first continuous column still to Barbados. Cockspur rum is made with high quality molasses and coral limestone filtered water from the local aquifer. Aged in oak for a minimum of 3 to 5 years beachside. The color has golden hues with blonde highlights. The legs are thick and widely spaced apart leaving only droplets behind. The aroma comes in the fragrances of dried tropical fruit and oak spice. Very crisp and slightly astringent. The rum is only mildly sweetened and very oaky with hints of pipe tobacco. Much like bourbon whiskey. The rum is clean tasting but light in flavor. Not one I'd recommend drinking over ice and diluted. The back of the bottle says to enjoy it neat and sipping over ice, you can also mix it with your favorite mixer, so on that I'm feeling it to be a grog kind of night. 1 lime squeezed with a heaping tablespoon of light brown sugar disolved in 2 ounces hot water. Adding 4 ounces Cockspur fine rum shaken well half being poured into your highball glass and topped with limeade. No sense getting the scurvy in this
