Balcones introduced their 100% Rye Mashbill with Elbon Rye from Northwest Texas, and also includes crystal, chocolate and roasted rye. It is distilled in copper pot stills, which creates a full-bodied style of rye whiskey.

I agree a very dynamic Texas rye soon to be changed, with no more roasted chocolate rye being used in the future (problems with sourcing & new owners) get in an old style bottle while you can.

This tastes like no other rye I've tried before, and I've tried a good few. If I were to have nosed it blind I might have said Scottish or interestingly barrelled Irish. The palate is a beautifully rounded, chocolately, with some heat that another reviewer here describes as chilli – I'll go along with that. A nice warm red chilli. Back to that nose after a few minutes and there's apple there, lime jelly. This is way more than I normally find in rye. Finish is medium to long and tending towards the usual rye astringency, but it's all in pleasant balance with everything else going on.

Tried this in a sample. I'm reasonably new to ryes and this is fabulous. Very sweet, with a chocolate taste throughout (especially on the finish). Some chili. A bit of coffee or char. It's lovely.
