Grown on old vines in volcanic soil, this wine has spent 14 months in underground cement tanks on the lees. Made with 100% Melon de Bourgogne grapes, this fresh, mineral white wine is perfect for pairing with seafood such as oysters.
It has a real sense of Umami with a salty fresh pear aroma with a hint of green olives. The palate has a lovely dry finish and a minerality that is reminiscent of a fresh mountain stream. Dawn Davies MW
