Made in 2009 at Caol Ila distillery, this young Islay single malt was matured in a single Gonzalez Byass sherry butt for nine years, before being bottled in February 2019 for Elixir Distillers' Single Malts of Scotland range. A complex, peaty whisky, it has clean aromas of courgette, coriander and carrots, alongside salty rockpools and smouldering driftwood, before a hint of sweetness. The palate offers notes of toffee apples, salted caramel and pistachios, alongside smoky peat and bonfire ashes.

    • Nose

      Salty rockpools, wood fires and matchsticks. Sautéed blend of vegetables and herbs including courgette, jalapeno and coriander. Underneath it all, a little toffee promises sweetness.

    • Palate

      Oily texture carrying plenty of solid peat smoke and ashes. Less vegetal than the nose suggests; instead, there's nostalgic dessert flavours – caramel-coated apples, nutty baklava and salted caramel ice cream.

    • Finish

      Salt liquorice sweets and shortbread. The smouldering embers of a bonfire carry on until the very end.
