Haku Vodka

Rice spirits have been made at distilleries across Japan for more than 400 years. The arrival of the pot still on the Japanese archipelago dovetailed neatly with the established culture of sake brewing to create shōchū. Various types of this traditional spirit are produced today, some based on barley or sweet potato, but the most common variety is made from rice. In developing Haku, Suntory’s distillers drew inspiration from both shōchū and sake to creating a modern vodka using age-old techniques.

Centuries in the making

Haku begins with Japanese white rice, milled and inoculated with koji cultures – the same microscopic fungi used in sake breweries to prepare rice for fermentation. After distillation using a combination of pot and column stills, the newly made vodka is filtered through bamboo charcoal to ensure purity. The resulting spirit is clean and slightly floral with balanced sweetness.

Japanese Espresso Martini

Invented in London but exported around the globe, the Espresso Martini is one of the world’s favourite cocktails. Haku’s delicate character survives the collision with coffee liqueur and espresso to give a gentle floral lift to the classic drink.

Ingredients

  • 30ml Haku vodka
  • 30ml Espresso (hot)
  • 30ml Coffee liqueur
  • Coffee beans and sesame seeds for garnish

Method

Place a cocktail glass in the freezer to chill while you make the drink. Combine the vodka, liqueur and espresso in a shaker, add lots of ice and shake until cold – make sure to use hot, freshly made espresso to keep its fluffy crema as you chill and shake the drink. Fine strain into your chilled glass and garnish with three coffee beans and a sprinkle of sesame seed.
