Port Ellen: Untold Stories The Spirit Safe is the first release in the new Untold Stories series from the Islay distillery, which closed in 1983. Matured in a selection of ex-bourbon and refill European oak sherry casks, this 39-year-old single malt has a fruity, smoky character, with notes of sultanas, melons and limes, with just a hint of ginger. A gentle peat smoke builds in the background alongside a savoury, sea-salt element. This whisky comes in a specially made wooden box, which can only be opened by two unique keys, mimicking the distillery’s spirit safe which can only be opened by using two different keys simultaneously.
