The 14th release in Foursquare distillery's Exceptional Cask Selection, Détente is a 10-year-old rum that has been matured in a combination of ex-bourbon barrels and ex-port casks. Jammy aromas of ripe plums, blackcurrants and loganberries are joined by ginger, rosemary, sultanas and maple syrup on the nose. The palate offers notes of raspberry jam, fruitcake, sticky dates and walnuts that linger in the finish alongside black pepper and smoky black tea.

Fabulous! My favourite Exceptional Cask Series ( closely followed by Zinfandel, Sagacity and premise) is the Mark II (Port cask, 9 year old). And this is its big brother. Same treatment, but one year older and beefed up at 51%. It is absolutely gorgeous! Fruity, but not sweet (no added sugar), long finish and - reflecting Richard Seale's skill - it does not set your throat on fire. But easy, sailor, add a splash of water or suffer the consequences...
