- Fruit Cake
Billy Abbott, The Whisky Exchange
Fruitcake on fire: rich raisins, glacé cherries and dark molasses overlaid with rich, dark and spicy peat smoke. Black treacle is run through with baking spice and drizzled over the cake. Barrel char and balsamic vinegar follow with a touch of meaty umami.
Thick, rich and very dark. Dark chocolate, barrel char and singed fruit cake is joined by layers of smoke: ashy, peaty and woody. Dried fruit and molasses notes roll through the middle, with sweet glacé at the core. Damp leaves build.
The leaves and chocolate linger with a touch of lime.

Nose: Peat hides behind the ash from last nights bonfire. Deep raisin Sherry notes. (Addition of water opens up the Sherry notes more) Palate: Prunes, ash smoke, dark bitter chocolate. Definitely barrel char not as sweet as it’s looks may suggest. Excellent mouth feel the 58 ABV packing a real punch. Finish: Dark chocolate and the chocolate lime boiled sweets I remember from childhood. To summarise, not for the faint of heart. This isn’t messing around. I love it but can see how it might be too dark and “dry if that’s the right word” for some.
