Ayala only produce its blanc de blancs in limited quantities, and only do so in the best vintages. They use only grapes from Grand Cru vineyards to showcase the purity of the Chardonnay. The wine is fresh and vibrant with pink lady apples, white flowers and hints of nutmeg, fresh lemon and yellow plums. A lovely aperitif that works equally with roast dover sole.
