The 2022-release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts from Gonzalez Byass, creating layers of rich fruit and warm spices throughout the palate.

The casks

The first González Byass casks arrived at Dalmore more than a century ago, the start of a creative partnership that continues to this day. As the years passed, these richly-flavoured casks have become a part of the Dalmore house style, contributing generous notes of walnut and coffee to the distillery’s round, citrusy whisky.
The master blender

The casks used to finish this exceptional dram were specially selected by Dalmore’s Richard Paterson. They rested for decades at González Byass in Jerez, where they were used to mature 30-year-old Matusalem Olorosso Sherry, before making the long journey to the Scottish Highlands. This is not the easiest way to source a whisky cask, but the extra effort makes perfect sense when the Dalmore 21 Year Old hits your glass.
The distillery

Dalmore has produced whisky on the north shore of the Cromarty firth since 1839. While many distilleries favour bespoke casks, created specifically to mature whisky, Dalmore sources sherry butts and wine barriques direct from producers. It’s a policy that has seem the distillery become a leader in whisky blending and finishing.
