A limited-edition small-batch cachaça from Yaguara that was made using the 2021 sugar cane harvest and bottled at a higher strength. The palate offers notes of lemongrass, chamomile, black pepper, green grass and lime that linger in the finish. Enjoy this cachaça in cocktails such as a Caipirinha, or on its own, over ice.
About Yaguara
Made with five generations of family tradition, this artisanal cachaça is made with hand-cut sugar cane that is crushed the same day it is harvested, creating a sugar cane juice known as ‘garapa’. Yaguara uses wild yeast strains to ferment the garapa and distills the resulting liquid in small batches, making sure that its processes are as environmentally sustainable as possible: for example it uses waste products to power the furnaces, make animal feed and organic fertiliser, and also re-distils the heads and tails of the spirit to make bio-fuels.
Caipirinha
- 50ml Yaguara Still Strength Cachaça
- 4-6 pieces of cut lime
- 2 teaspoons caster sugar
Method:
Muddle together the lime and sugar, then add to a glass with lots of ice. Pour over the Yaguara Still Strength and stir upwards before serving.
About Cachaça
Brazil’s national spirit, Cachaça is traditionally made using fermented sugar cane juice, though some producers will use sugar cane syrup or molasses, similar to Agricole rum from Martinique. It is distilled to a maximum of 75% ABV, lower than rum which is usually distilled to 96% ABV, meaning that it retains more of the grassy, funky flavours for which is it famed.
