An ethically-produced gin from Japan that is made from sake that was never used due to the COVID-19 pandemic. Ninja sake from Seko Shuzo brewery in Koka City, Shiga Prefecture, is distilled and infused with a blend of botanicals including juniper, Japanese sudachi citrus, myoga stalks (Japanese ginger), koboku tea, sencha green tea, camomile and coriander seeds. The result is a bright, fresh gin with notes of green tea, ginger spice, citrus, sweet camomile and oodles of umami throughout the palate.
