A limited-edition single pot still Irish whiskey from Method and Madness that has been bottled exclusively for The Whisky Exchange. Initially matured in a combination of ex-bourbon and ex-sherry casks, it was then finished in specially-selected hickory wood casks. Aromas of soft smoke, cured meats and honeycomb fill the nose, followed by notes of cacao nibs, salted caramel and smoked almonds on the palate. The finish is soft and full, with lingering notes of woody spices and dark chocolate.

    • Nose

      Immediately filled with aromas of candied bacon, sweet hickory smoke, honeycomb and pecan pie, the nose then brings heaps of caramelised apples, autumn leaves, slightly singed barbecued pineapple and burnt caramel.

    • Palate

      Ground ginger and cloves jump forward, followed by dried figs, stewed plums, savoury oak spice and far away bonfires. Green sticks, smoked almonds and dark chocolate build underneath.

    • Finish

      Lingering notes if rich mocha ice cream and treacle tart.
