
Product Description
Cognac has been made by five generations of the Fillioux family starting with Honore Fillioux in 1894. The house continues to be a small-scale production that oversees the entire process including soil and grapevine health, to distillation and bottling, and everything in between. Bottled exclusively for The Whisky Exchange, this Cognac was matured in a Limousin oak cask, before being bottled by Through the Grapevine in 2023. There are aromas of candied citrus, dried fig and praline on the nose leading to notes of bergamot, toasted hazelnut and nutmeg on the palate.

Nose
Corinth raisins, sultanas, dried figs, prunes, a little drop of PX sherry, almond-y galette des rois with preserved apricots. Bee pollen, fresh straw, set honey, beeswax bring to mind a good Clynelish single malt.
Palate
Silky on the palate with more apricots, bergamot liqueur, sweet white wines, liquorice, walnuts, toasted chestnuts, hazelnuts and hint of cacao. A little prickle of oak brings warmth, texture and notes of nutmeg and cardamom.
Finish
Long and pleasantly dry with russet apple, dried apricot and subtle French oak tannins. A lovely example of a big, generous Grande Champagne Cognac bottled without intervention.

Nose
Battenberg cake and candied plums, followed by a flurry of sugared almonds, dried apricot, golden hay and set honey aromas. After a while it develops layers of sultanas, currants and honeyed dates
Palate
Crystallised ginger, nutmeg, toasted hazelnuts. treacle toffee and dry oak spice fill the palate in quick succession. Underneath is a medley of bitter almonds and bergamot, with hints of golden syrup and dried fruits
Finish
A sweeter vein here, akin to honeycomb, with touches dried apricot, dates and oaky spice

Five Generations
of Fillioux
Domaine de la Pouyade sits atop a hill overlooking its 25-hectare vineyard in the heart of the Grande Champagne region. Five generations have tended to the vines, which were planted above a limestone fault and grow Ugni Blanc grapes – the predominant variety of the region. Jean Fillioux has control over each stage of production which allows it to maintain the highest standards possible. The estate produces wine from aromatic and acidic grapes – which are perfect for the creation of Cognac – the wine is then distilled on the lees and matured in high-quality French oak casks, which culminate in powerfully-fruity Cognacs with real elegance and complexity of flavour.
