Rich and complex, this 2012 Auchroisk single malt was finished in a first-fill Amarone wine cask before being bottled exclusively for The Whisky Exchange. Known for its bold, concentrated flavour, this wine cask offers a rich vein of cherries throughout the palate, as well as sticky dates, dark chocolate, raisins and marzipan notes.

Billy Abbott, The Whisky Exchange
Nose
Sultanas, crystallised sugar and chocolate cake – Black Forest Gâteau and Mr Kipling’s Country Slices. Almond paste and Florentines develop alongside juicy fresh cherries and slightly sour apple sauce.
Palate
Richly textured and intense. Singed notes lead: burnt autumn leaves and old coal stoves. Stewed orchard fruit follows, studded with sultanas and dried cherries. Dark chocolate cake lingers at the back.
Finish
Spice lingers, with dark chocolate, damp bark and a touch of dried apple.
Italian
Heart
One of the most famous wines made in Italy, Amarone della Valpolicella comes from the Veneto region. This luscious, full-bodied and fruit forward red wine is made using a traditional method called appassimento, which involves partly drying the grapes before fermentation to concentrate the sugars and amplify the flavour.
This cask comes from an award-winning producer that has received glowing reviews from wine critic Jancis Robinson, and is among the best in the region.

Led by Andrew Symington, who learned his trade selecting casks for the Prestonfield Hotel in Edinburgh, the company is well known for having not only excellent, well-aged stocks of whisky but also for experimenting with casks and cask finishing.
