Bold and fruit-forward, this 2011 Edradour single malt was matured in a single white Burgundy hogshead for 12 years, before being bottled for The Whisky Exchange by independent bottler Signatory. Edradour's full-bodied whisky stands up to wine casks well, taking on layers of juicy fruit, vanilla, roasted nuts, lemon peel and freshly-baked bread that fill the palate.

    • Nose

      Sour grape juice and forest floors balanced by dried fruit-and-nut trail mix: sultanas, raisins, hazelnuts and walnuts. Damp oak and toasted sesame develop alongside dark chocolate dipped Florentines.

    • Palate

      Sesame crisps and stewed apples lead into juice sultana-and-raisin jam. Nutty notes build – the hazelnuts and walnuts of the nose are joined by peanuts and blanched almonds. Barley sugar sweetness hides underneath along with more sugar-syrup painted Florentines.

    • Finish

      Sweet nuts and flapjack notes linger, along with a touch of toasted sesame.

The cask used to age this exclusive single malt comes from one of the most sought-after names in Burgundy. One of the best Grand Cru producers in the region, it is based in Meursault and boasts some of the best terroir in Burgundy. With tiny yields and meticulous winemaking, this producer’s wines are packed with character and flavour, that has been passed on to this bold Edradour whisky.

Founded in 1988, Signatory has spent almost 40 years as one of Scotland’s most respected independent bottlers. Led by Andrew Symington, who learned his trade selecting casks for the Prestonfield Hotel in Edinburgh, the company is well known for having not only excellent, well-aged stocks of whisky but also for experimenting with casks and cask finishing. Add to that its regular release schedule, and you have an indie bottler that reliably offers whiskies to suit every palate.
