This is an exciting and well-focused peated single malt from South Korea’s Kimchangsoo. It bursts with a sweet barbecue smoke and notes of seaweed, cooked meats, polished oak, heather, and salted dark chocolate. This richness and balance was achieved through maturation in oloroso, pedro ximenez, Bordeaux wine and quarter casks.

    • Nose

      Smouldering damp firewood lead to singed raisins, Crunchie bars and hints of olive brine. Darker forest floor, notes develop, with anise, tar and freshly unwrapped bandages. Dark chocolate, mint fondant and dried lime peel bring up the rear.

    • Palate

      Rich raisins and glacé cherries to start, with dark fruit cake and more singed raisins in support. The mint from the nose is joined by the tar, combining into a dark and savoury mint chocolate chip. Mulchy leaves and riverbank earth build, followed by layers of dark and spicy peat smoke.

    • Finish

      Blackcurrant jam, dates, red grapes, squishy chocolate cookies, smouldering leaves and rich earth.

Kim Chang-soo is a man with a passion for whisky, and has spent more than a decade on a journey to make his own.

Having fallen in love with whisky in the early 2010s, Kim travelled to Scotland in 2014 and toured the country, stopping at every distillery he could along the way. His dream of an apprenticeship didn’t come to pass, but he met a member of the Chichibu team in a bar, and shortly after trained with them, learning how to make whisky much closer to home, in Japan.

By 2020, he had raised the money to build a distillery in the town of Gimpo near Seoul, and started distilling in 2021. He focused on a style inspired by the peaty whiskies of Islay, experimenting with both imported and locally grown barley. Balancing smoke against the oaky character Korea’s large temperature variations give, he has created his own distinct style of Korean single malt whisky.

With his whisky increasingly popular at home, and now taking its first steps abroad, Kim has secured funding to build a new distillery – the tale of Kim Chang-soo is just beginning.
