Aged around 30 years in oak before bottling, this Hors d'Age from Guillon Painturaud retains the house style of medium-weighted spirits still very vibrantly fruity even at this great age. Quite rich and woody. Stewed pear and cigar box aromas initially, a dusting of cinnamon and mocha/cocoa notes. Develops ginger and grapey, almost Port-like aromas, with cooked red apples, damson jam and polished church pews. Evidently a long-aged spirit.
Medium-full. Very slick mouthfeel. Quite prominent spice attack, then intense fruit: apple, plum, damson, raisin, even a hint of sloes. Exceptionally rounded, with some quite prominent woodspice.
Becomes drying and more spicy in the mouth as with most spirits of this age, but retains good harmonious leathery fruit in the background. Hints of red liquorice at the death.
Extremely clean and pleasingly intricate palate. Good to taste an old cognac retaining such vibrant fruit character. Very, very drinkable.

This stuff is amazing...I had a glass with dessert at the Joel Robuchon restaurant in Vegas - recommended by the sommiler and was blown away. Luckily I just found the card in my suitcase that he left me where he wrote down all the different spirits we had during dinner so I could buy a bottle. Can't wait to get it... I don't drink a lot of cognac (mostly single malt scotches) but this stuff absolutely blew me away.
By far the best cognac I have ever tasted is Guillon Painturaud - tour their distillery - for free - and if you're really lucky they'll let you taste the 50 year old at cask strength. This is an exceptional cognac - their 30 year old hors d'age is an unblended single-barrel cognac (as are all the cognacs from this producer) with flavours and subtleties to fascinate even the most distinguished pallet. The 20 year old, available for as little as ?50 a bottle, although not as elegant as the hors d'age isba permanent feature of my drinks cabinet.
I don't like sharing my prized possessions but everyone who has had a glass of this says it is the best they have ever tasted. It is interesting to see the note on the Guillon-Painturaud Vieille Reserve here that in France those in the know, through Guide Hachette, reckon the younger cognac is one of the finest on the market. This is even better; finer and even more delicate.
