Holyrood Distillery is a Scottish distillery located in the heart of Edinburgh, at the foot of Arthur’s Seat. Known for its experimental approach, Holyrood explores the influence of yeast, barley, and oak to create distinctive and innovative single malts. This expression is one of a three-part series examining how different French wine yeasts shape the flavour profile of whisky.

This Single Malt Whisky is fermented using 60% Pinnacle M yeast and 40% Maurivin B yeast, creating a distinctive and complex base spirit. It is then matured in a combination of ex-bourbon barrels and ex-Burgundy barriques. The result is a harmonious balance of sweet and savory, featuring a biscuity texture complemented by vibrant notes of raspberry jam and pomegranate.
