High West whisky distillery was founded in 2006 by David Pirkins and his wife Jane. The distillery was the first to be built and legally operated in Utah since 1870 due to the state’s ban on alcoholic drinks. David began his career as a biochemist before moving to distilling, and their first operation was a saloon with a small 250 gallon capacity still.
