One of the most diverse spirits in the world, mezcal is made in nine Mexican states and ranges in style from delicate and fruity, to rich and earthy, and bold and smoky. Unlike tequila, which can only be made with one species of agave, mezcal producers regularly use more than 30 varieties, either in a blend or individually, with each variety producing a distinct character.
