David Leclapart is one of Champagne's strongest supporters of biodynamics; he has been certified Biodynamic since 2000 and employs many of the principles in the winery as well using very little sulphur and no dosage. This Champagne is a perfect combination of apple tarte Tatin, roasted hazelnuts and some ripe spiced fruits. This wine needs time to evolve in the glass so don't rush it.
