The serving suggestion for this floral Icelandic gin is that it be enjoyed 'while fly-fishing in a flowing river'. This isn't as random as it sounds - Himbrimi gin was created by artist Óskar Ericsson to be the perfect fishing companion, and is inspired by the scents of herbs that grow along riverbanks. Infused with anglica seeds, honey and Artic thyme - a herb that smells much like lavender – this is a bittersweet and intensely floral Old Tom style gin.

Himbrimi is named after the bird known in English as the Loon or Great Northern Diver, one that is a common sight for fishermen.

Tasting Notes

  • Tasting notes from the producer

    Nose: Honey, lavender and earthy like the Icelandic highlands after a spell of rain.

    Palate: Juniper to the fore, followed by very bright floral notes. The lavender-like arctic thyme is definitely the dominating flavour but is complemented by the sweet honey and crisp angelica seeds. Smooth, sweet and soothing.

    Finish: An extremely long, smooth aftertaste. The floral notes linger on the tongue for ages.

    You’ve had sipping rum - this is sipping gin. The woody, herby, and deep green notes are so present in this wonderful Icelandic gin. It makes an amazingly complex gin and tonic, or stands alone neat. We have yet to try Martinis - but it is definitely our next cocktail.

    Extremely herbaceous. The dominant thyme flavor is bitter and bracing. If you like that kind of thing, Himbrimi is very well done, and still smooth. However, start with a smaller pour to avoid getting bitter fatigue. Stands up well, perhaps better, on its own, but it's still fun to try in, e.g. a Martinez or Negroni. It will dominate any cocktail, but if you don't mind that, try something new.

    I’m a Bombay Sapphire kind of gal but after a visit to Iceland, am smitten on the smooth taste. The bartender who introduced it to me used a shot of ginger ale and swirl of honey! Love it for cool winter nights.

    I am a true gin fanatic. The color of the Himbrimi is nice but it has an odd bitter taste that I didn't enjoy, despite being smooth.

    This is my favorite liquor. Even as a whiskey guy, this gin is emaculate. The finish that lingers is to die for. The tingle of the arctic thyme lingers until your next sip. I don’t know when I’ll have another gin that even comes close

    It is a smooth, tasty, deep gin that is versatile! We actually really liked it as a gin and tonic with a touch of lime. You must try it if you’re a gin fanatic

    This is a wonderful gin. It tastes of honey and then ice. As in it tastes of the arctic. Great straight or with some frozen rosemary

    Very good pallet of flavors, escpecially the lavender and a sweet honey like aftertaste. I would recommend this gin and would suggest trying it in the mix
