Thomson is a small distillery based just outside of Auckland and its creativity and has guided it to create this manuka wood-smoked whisky. This bottling is exclusive to The Whisky Exchange and is made with home-grown malted barley, smoked with manuka wood and distilled in copper pot stills. Aromas of toasted cinnamon, clove and Manuka honey on the nose.

Nose
Fresh and green with menthol, mint tea, eucalyptus, sage, green wood, a touch of real wasabi, mustard cress, and pine resin. There’s also a bit of the medicine cabinet here with the sort of antiseptic ointments and plasters you’d associate with older-vintage Islay whisky.
Palate
Oily and spicy with cinnamon, clove, allspice, vanilla, cedar, nutty honey and fresh baguettes. That faintly medicinal manuka note continues throughout, accompanied by a little bitter lemon and some hints of yellow fruit.
Finish
Campfire smoke appears right at the end. That manuka influence takes a bit of getting used to but it’s very unusual and totally fascinating.
The first whiskies bottled by Mat and Rachael Thomson were from the now defunct Willowbank distillery – also known during its somewhat turbulent history as Milford and Lammerlaw. As their supply of old casks dwindled, the pair began to experiment with distilling their own whisky, a process that included them smoking barley over manuka wood chips on their home barbecue. A decade later, this meeting of traditional whisky making and native flavours has yielded this fascinating single malt with a softly medicinal character unique to manuka.
Made in Auckland
In New Zealand, manuka is both a preservative and a remedy. In addition to lending its unique properties to manuka honey, the leaves of this small tree can treat fever and soothe the skin, while its wood – which carries a distinctive, medicinal scent – has been used to smoke meat and fish for generations. Along with peat from New Zealand’s South Island and Pinot Noir casks from the nearby wine country, this unique ingredient has become a part of Thomson Whisky’s identity. This inventive use of local flavours was a key factor in this small distillery being named The Whisky Exchange Rising Star for 2024.
Spotlight on New Zealand Whisky
When Willowbank was dismantled in 2007, it seemed that the country’s whisky industry would become a historical footnote. But today a new generation of craftspeople like Rachael and Mat are developing a fresh identity for New Zealand whisky. Across the North and South Island, there are distillers merging long-established whisky-making know-how with local ingredients and flavours. Now is the perfect time to get in early on one of the world’s most exciting new whisky cultures.

Fantastic! Loved it! Intense sweet smoke
The smell is very leathery, reminds me of the inside of a classic Mercedes with such a rich smell. Really Smooth and easy to drink, not a big whisky drinker but this has caught my attention.
