Exclusive Signatory Bourbon Cask Series

There’s a reason ex-bourbon barrels are the cask of choice across the whisky industry. In addition to imparting flavours of vanilla and warming spices, used American oak can allow single malts to develop in a way that places the distillery character centre stage. We selected these three single malts in collaboration with Andrew Symington of Signatory Vintage to celebrate the affinity between Scotch whisky and top-quality bourbon barrels.

Mortlach 2003 21 Year Old

The so-called Beast of Dufftown is known for a heavy, savoury style of whisky that’s usually presented with a layer of sherry cask influence. But after 21 years in a bourbon barrel, this robust Speyside single malt shows a clear expression of the distillery character with notes of nuts and toffee meeting dried spices and fruity hints of pineapple.

Linkwood 2008 16 Year Old

There’s something special about the way Linkwood’s fresh and floral single malt interacts with American oak. This bottling offers enticing notes of elderflower, buttercream icing and grapefruit on the nose before a palate of star fruit, sherbet, freshly cut grass and creamy rice pudding.

Clynelish 2008 17 Year Old

This old Highland distillery is a perennial favourite of whisky fans everywhere, and this bottling – matured in a single second-fill bourbon barrel – shows exactly why.
