One of Hudson’s founders Brian Lee initially planned to open a climbing ranch on the Tuthilltown Gristmill back in 2001, but the neighbours weren't too happy about the idea and forced Brian to come up with a new plan. Shortly after Lee met his new business partner Ralph Erenzo, and in 2003 they officially founded the Tuthilltown Spirits LLC.
