This limited-edition blended whisky is a collaboration between Johnnie Walker’s master blender Emma Walker and renowned Japanese chef Kei Kobayashi. Joining forces to push the boundaries of flavour, the pair set out to create a whisky that encapsulates the character of umami. A Japanese word used to identify the ‘fifth taste’, umami is an enigmatic, savoury taste that is often hard to define.

Each cask that went into this blend was specially selected for its character, creating a marriage of casks that offer the perfect umami profile. Combining aromas of ripe apples, cashew nuts, sea salt and savoury oak with notes of white peaches, blood oranges, oak spice, smoked meat, salt and black pepper, there is a careful balance between sweet and savoury that embodies that umami character.

    • Nose

      Charred orange peel and girolle mushrooms break through immediately, with a backdrop of sea salt, crunchy cranberries, sweet oak spice, star anise and cardamom. More blood orange aromas bring up the rear, followed by savoury hints of dried meat.

    • Palate

      Initially filled with sweet caramel, the palate quickly moves to notes of charred oak, savoury malt, bright citrus and crushed black peppercorns. There’s an undercurrent of smoked meats and aromatic spices that builds towards the back of the palate.

    • Finish

      A nutty finish full of lingering notes of wood smoke, mushrooms, orange oil and peppery oak.

    • Comment

      A complex array of sweet and savoury, with an incredible balance. This is one that takes time to fully unravel and will keep you going back for more.
