From the famous Philip Harper, Englishman turned Sake brewer, this small-batch sake puts the U in Umami; packed with nutty notes – pine nuts, macadamia, brazil – thrown together with a hint of forest floor. The palate is big and dry with red-wine-like tannins and the finish is very dry, but with a lovely acidity and a touch of melon. Try this with your fish and chips this weekend.
