Since 1729, Ximénez-Spínola has built its reputation by focusing exclusively on a single grape variety, Pedro Ximénez, crafting an exceptional range of wines from dry to sweet.

This distinctive wine is created from a blend of two historic soleras: the first, a dry oxidative style established in 1964, and the second, a sweet wine solera begun in 1918. These two components are expertly blended to produce a medium-sweet wine with remarkable freshness and balance. Expect aromatic notes of quince, honey, ginger, and dried fruits, leading to a rich yet lively finish. It pairs beautifully with a plate of hard cheeses
